GLAM VEGAN Chef Todd Erickson, the chef behind South Beach’s Huahau’s Taqueria partnered with vegan and animal advocate Janette Miller to open GLAM Vegan Miami in Midtown Miami. An acronym for Green Living Animals Matter, the restaurant serves tasty vegan dishes with beer and wine. Some of Todd’s creative veggie combos are an “Al Pastor” taco of bbq jackfruit with pineapple and a chilled kelp noodle dish with ginger, coconut and almonds. The soup list includes fresh gazpacho every day and a daily hot soup choice. For dessert, there are truffles and Choco-Cado mousse, a combination of dark chocolate and avocado.
